International Wine ReportThe TOR Cimarossa Cabernet Sauvignon is an incredible showing in 2011. It offers intoxicating aromas and flavors that come in layers, starting off with a generous dose of freshly crushed dark cherries and crème de cassis, which are followed by chocolate and graphite, before finally folding in some mineral and floral notes that add a sense of freshness. The ripe, concentrated fruit is well polished and bursts on to the long, plush finish that is laced with dark fruits and chocolate, which seems to carry on and on. This is a fantastic wine and really becomes expressive with air contact, but ultimately this will need a bit more bottle age before it will be at its best. Overall, this is a phenomenal effort by Tor and winemaker Jeff Ames. (Best 2016-2030).
Robert Parker, The Wine AdvocateThe fabulous 2011 Cabernet Sauvignon Cimarossa Vineyard offers additional evidence of how brilliant this vintage turned out on this high elevation, mountain AVA. Tor told me the crop reached perfect ripeness on Howell Mountain, and the result is a wine of great intensity and lots of mulberry, blackberry and violet-infused notes intermixed with a hint of graphite, a full-bodied richness and a layered mouthfeel. One of the stars of the vintage, this beauty should be consumed over the next 15+ years.
